PUMPKIN SPICE TWICE BAKED POTATOES

Twice Baked Potatoes

Servings: 10-12

These delicious Pumpkin Spice Twice Baked Potatoes make for the perfect side dish for any meal this season. This sweet and savory combination is packed with healthy fats from coconut milk, clean protein from Pumpkin Spice with Collagen, and seasonal spices. They’re filled with flavor and the perfect fall dish for when you want something warm and comforting!

INGREDIENTS:

  • 5 pounds of russet potatoes
  • Olive oil
  • 1 bottle of Pumpkin Spice with Collagen
  • 1 can of coconut milk (full-fat)
  • 3 tbsp ghee
  • 1 cup cooked bacon, chopped (bacon bits if preferred, plus a little more for garnishing) 
  • 2 green onions, chopped (plus a little more for garnishing) 
  • 2 tsp sea salt
  • ¼ tsp black pepper
  • ⅛ tsp ground sage
  • ⅛ tsp ground cinnamon 


INSTRUCTIONS:

  • Preheat oven to 400 degrees.
  • Wash and scrub potatoes and place on a baking sheet. Rub olive oil on the potatoes and sprinkle with salt and pepper.
  • Bake potatoes for 40-50 minutes, or until a fork easily pierces the skin.
  • Remove the potatoes from the oven and drop the temperature down to 350 degrees.
  • Cut each potato in half lengthwise and lay them on the baking sheet.
  • Carefully scoop out the cooked insides of the potato, and transfer into a bowl. Make sure you leave a little bit of potato along the skin to keep the “boat” sturdy.
  • Add the remaining ingredients (Pumpkin Spice with Collagen, coconut milk, ghee, salt, pepper, sage, cinnamon, bacon, and green onions) to the bowl and mix (standing mixer is preferred). 
  • Once you’ve reached a smooth, thick consistency (and have done a little taste test to adjust seasonings, if needed), fill each potato boat with the filling.
  • Top the potato boats with any leftover bacon and green onions for garnishing.
  • Place the filled potato boats back in your oven and bake for approximately 15 minutes.
  • Finally, broil the potatoes for approximately 2-3 more minutes to lightly brown the tops.
  • Enjoy!

 

 

PUMPKIN PROTEIN PUDDING

This Pumpkin Protein Pudding makes for a great start to the day, it’s packed with chia seeds and Pumpkin Spice with Collagen for a boost of clean protein, warm seasonal spices, and almond milk for a deliciously smooth finish. It’s super easy and convenient — plus, it’s a quick breakfast you can make the night before to prep for busy mornings!

INGREDIENTS:

  • ½ cup Pumpkin Spice with Collagen
  • ½ cup MALK unsweetened almond milk
  • ¼ cup chia seeds
  • 2 tbsp Pumpkin Spice Nutpods
  • 1 tsp pumpkin pie spice


INSTRUCTIONS:

  • Mix into a bowl, set in fridge overnight.
  • Serve with sliced almonds, chopped pecans, and a sprinkle of cinnamon.

 

 

PUMPKIN SPICE VEGGIE OATS

Veggie Oats

Who isn’t a fan of making mornings easier? These Pumpkin Spice Veggie Oats will boost your morning hustle, and can also be made into overnight oats for an even easier way to start your day.

INGREDIENTS:
For the oats:

  • ½ bottle of Pumpkin Spice with Collagen
  • 1 packet of Organic Instant Oats
  • 2 tbsp of Flaxseed
  • ½ cup of riced cauliflower 
  • ½ cup of water
  • Sprinkle of Cinnamon, Nutmeg, Allspice & Cloves, to taste 
  • 1 scoop of Collagen, if preferred


For the Toppings:

  • 1 Banana
  • Cocoa nibs, to taste
  • WholeMe Almond Coconut Clusters (or other museli/cereal if preferred)
  • 1 tbsp of almond butter
  • 1 tbsp of honey 


INSTRUCTIONS:

  • Mix all of the ingredients together, except for your toppings, in a microwave-safe bowl. Microwave for approximately 2-3 minutes. 
  • Remove from the microwave and add toppings. 
  • Enjoy!
  • Optional: you can easily make this into overnight oats by mixing all of the ingredients into a air-tight container and letting it sit in the refrigerator overnight!

 

 

CINNAMON PUMPKIN SPICE PANCAKES

Pumpkin Spice Pancakes

These easy Cinnamon Pumpkin Spice Pancakes are perfect for holiday mornings and everything in between (we like to match a batch ahead of time and freeze them, so we can easily reheat them on busy days)! Flavored with Pumpkin Pie Spice and Pumpkin Spice with Collagen, it’s the perfect combination that will surely make your family very happy this season.

INGREDIENTS:

  • ½ bottle of Pumpkin Spice with Collagen
  • 1 tbsp of Nutpods Hazelnut Creamer
  • 1/2 cup of oat bran
  • 2 tbsps of almond flour
  • 2 tbsps of flaxseed
  • 1 tsp of baking powder
  • 1 egg
  • Sprinkle of Pumpkin Pie Spice, to taste


INSTRUCTIONS:

  • In a medium-sized bowl, wisk all ingredients together.
  • Heat skillet on medium-high heat, and add oil or butter.
  • Take a few scoops of the pancake mix, and pour onto the heated skillet.
  • Let the pancakes cook for approximately 2-3 minutes, and then flip.
  • Remove from skillet and enjoy!



PUMPKIN CHEESECAKE ICE CREAM WITH SALTY CINNAMON SWIRL

A creamy homemade ice cream bursting with seasonal pumpkin spices. Basically, the best Pumpkin Cheesecake Ice Cream recipe. EVER! Your guests will swoon (or spoon) over this recipe at your next holiday party.

INGREDIENTS:

  • 1 bottle of Pumpkin Spice with Collagen
  • 1 cup raw cashews
  • 2 pitted dates
  • 2 tsp cinnamon
  • 1 tsp ginger
  • ¼ tsp cloves
  • ½ tsp maple extract
  • ¼ tsp salt
  • 3 tbsp almond butter
  • 1 tbsp pure maple syrup (optional)


INSTRUCTIONS:

  • The day before making the ice cream, place the bowl of your ice cream maker in the freezer.
  • Place the cashews and pitted dates in a glass jar and cover with just enough water to submerge. Let this soak overnight, then drain the water.
  • Using a high-powered blender, combine the cashews, dates, 1 tsp cinnamon (half the amount above), ginger, cloves, maple extract, and bottle of Pumpkin Spice with Collagen. Blend this mixture together until completely smooth.
  • Transfer mixture into a bowl and set in the fridge to cool.
  • When mixture is cold, let it process in your ice cream maker until mixture begins to solidify
  • While ice cream is beginning to freeze, combine the remaining 1 tsp cinnamon, salt and almond butter in a small bowl. Option to add the maple syrup. 
  • Add this mixture, by the spoonful, into the ice cream maker while it is still on, just before ice cream has finished freezing.
  • For a firmer ice cream, transfer to an airtight container in the freezer and let sit overnight. 
  • Enjoy!

Pumpkin Apple Pie Dip

Bring out the best of fall flavors with this super easy Pumpkin Spice Apple Dip, perfect for enjoying with fresh apple slices, or other seasonal fruit. It makes for a deliciously tasty dessert, or if you’re craving something sweet in the morning, enjoy with pancakes or oatmeal. INGREDIENTS:
